Banana, Blueberry & Almond Baked Oatmeal

This delicious baked oatmeal only requires one bowl, no mixer needed! This recipe is also dairy free, gluten free, & vegan friendly! Each bar is only 156 calories and full of delicious banana and blueberry flavor with a wonderful crunch from the almonds on top. Banana baked goods are also the perfect way to use up your “old and brown” bananas, turning them into a delicious treat!

Why coconut sugar? Coconut sugar has a lower glycemic index than granulated white sugar, meaning that it will not spike your blood sugar the way that granulated sugar does.

Can I use regular-sized/non-frozen blueberries? Of course! Use them in the recipe as normal. I would suggest using 1 1/4 c. – 1 1/2 c. regular-sized blueberries to ensure that they cover the entire middle layer of the baked oatmeal.

Can I use a different type of milk? Of course! Just be aware that the caloric value may change based on the type of milk used.

2 c. rolled oats
1 tsp. baking powder
1/2 tsp. salt
1 mashed banana
1/4 c. coconut sugar
1 1/2 c. unsweetened vanilla almond milk – room temperature
1 tsp. vanilla extract
2 tbsp. coconut oil – room temperature
1 c. frozen wild blueberries
1/4 c. sliced almonds


Preheat your oven to 325 degrees F. Grease a 9 x 9 square pan.

In a medium-sized bowl, mash the banana. Then, stir in the coconut sugar and coconut oil until combined. Add in the almond milk and the vanilla extract and mix well. Then, add in your oats, baking powder, and salt, mixing until combined.

Scoop half of the oat mixture into your greased 9 x 9 pan. Then, sprinkle the blueberries over the batter. Finish off by scooping the rest of the batter over the blueberries, and sprinkling the sliced almonds on top.

Bake at 325 for 15 – 20 minutes, until all of the liquid has set. Wait for the baked oatmeal to cool before slicing into 9 servings. Enjoy! Keep oatmeal covered in the fridge until ready to eat. Can be reheated in the microwave or served cold!

Oatmeal is best on the day that is baked. Keep stored in an airtight container at room temperature and enjoy for up to 5 days.
