Butterscotch Chocolate Chip Blondies

Chewy, buttery, delicious & easy! These blondies only require one bowl to make, no mixer required!

Yield: 12-16 blondies depending on the cut
Preparation: 20 min.
Bake time: 15-20 min.

1 c. all-purpose flour
1/4 tsp. salt
1/2 tsp. baking powder
1/2 c. unsalted butter – browned & slightly cooled
1 c. light brown sugar
1 egg + 1 egg yolk – room temperature
1 1/2 tsp. vanilla extract
1/4 c. butterscotch chips
1/4 c. semi sweet chocolate chips


Preheat your oven to 350 F. Line and grease a 9 x 9 pan with parchment paper.

Melt and brown your butter in a saucepan. Once cooled slightly, combine the browned butter with the sugar. Add in the egg and stir until fully combined. Then, add in the egg yolk and vanilla and stir until combined.

Add in the flour, salt, and baking powder and mix until just combined. Be careful not to over-mix! Fold in the butterscotch chips and the chocolate chips

Pour the blondie batter into your pan. Sprinkle some more butterscotch and chocolate chips on top, if desired. Bake for 15-20 minutes, until the blondies are golden brown. Enjoy!

Blondies are best enjoyed on the day that they are baked but will keep in an airtight container at room temperature for 3 days.
